It’s exam time and there is a bit of collective anxiety around campus as students enter into the final stretch. What a perfect time to make some comfort food. This week I tried a pizza recipe that I promise will not leave you in a carb coma, hence impairing your studies and ability to stay awake.
I cannot take credit for this recipe . A friend of mine found it on the blog, “Your Lighter Side“. Basically, instead of having a crust made out of flour, the crust is made out of cooked, grated cauliflower. Sounds gross, eh?…but it isn’t…and it’s low carb/gluten-free. I could not even taste the cauliflower. Traditionally, I would think only weird people would cook like this, but actually think about it…you may have to jedi mind trick yourself a bit, pretending to be eating a real pizza, but you are gaining all the healthy benefits of cauliflower-lots of vitamin C, fiber, etc. So, why not try a healthier alternative?
I would modify the recipe a bit by adding garlic and substituting some of the full fat cheeses for reduced fat parmesan cheese or low-fat/skim mozzarella cheese but it’s worth trying if you are adventurous in the kitchen. Just as an fyi…cauliflower can be found here fresh at IGA Portsmouth or Save-A-Lot in Roseau. You can also buy it frozen.
Hahahahaaaaaa love it! I use the shredded Flavorite low moisture/part skim mozzarella cheese which you can find at 7-11 (on a good day). Not sure about the other stores in Picard bc I usually stock up on cheese in Roseau. Save-a-lot tends to have the widest selection of low fat cheese. Last week they had the Kraft 2% shredded mexican blend, which I have never seen on island. Woo hoo! Astaphans also carries the Flavorite shredded low fat mozz.
Thanks for the recipe! I’m a gluten free eater and find it pretty challenging in Dominica…but where have you found low-fat or reduced fat cheese? I can only seem to find full fat! I asked a local about this, and his response was “I don’t know why all you Americans are trying to lose weight…we are trying to gain it”. 🙂
